Well, here we are in August already! Where has this summer gone? I am thrilled with the harvest from my garden. There are some very full and happy critters running around here too.
Let’s just say I did my part, (not voluntarily) to feed the wildlife, from 6 beautiful rows of corn I was only allotted 3 ears. But oh well, I will up my game next year and I will win this battle yet.
One thing those little varmints didn’t touch was my zucchini. And I am thankful for that. I have made zucchini bread, fried zucchini, and zucchini relish. I even purchased a little gadget that turns my zucchini into spaghetti noodles, lasagna noodles and shreds it for me. I am stocked with all things zucchini. Thus, bringing us to this week's recipe. Baked Zucchini Fries. Now we just need to chat about how delicious these are. And since they are baked, they are nutritious as well. And as always, I added a little extra flavor with a product from Patti’s. Their Sun-dried Tomato Dip Mix added just the right amount of tang to this recipe.
