Happy Tuesday folks. I hope everyone is doing well today.
Sitting on the back porch this morning with my coffee required
shoes and a hoodie. As much as I hate to admit it, (because I’m
“Team Summer”), the brisk morning was quite invigorating.
And made the coffee taste just a bit better. But trust me, there
was no pumpkin spice. My hypocrisy goes only so far.
My plan was to do a welcome to fall recipe this morning, but I
decided to wait jus another week or two more. There are still some veggies in my garden so today I am going to share one of my family’s favorite macaroni salad recipes. Lots of veggies and flavor in this recipe. I used a package of Patti’s Garden Fest Dip Mix for that extra tastiness they love. Just so you know, I do occasionally use a dip mix for a dip. But there is just so much more they can be used for.
Choose your favorite veggies. For this one I chose mini sweet peppers, celery, green onions, cherry tomatoes, cucumbers and peas. I cook, rinse and drain my macaroni and pour it into a large bowl. Add my vegetables, mayo, sour cream and dip mix. Mix thoroughly and serve. Kept covered in the fridge, this can last about 3 days. But around my house it’s gone the next day.
