BBQ Chicken Quesadilla


 



Happy Tuesday Folks. It has been a while. Summer has happened at Patti’s. So busy is an understatement, plus people being on vacation, including myself, it was just hard to have time to be creative. But this past weekend I took some time to get something new together for you.


I grilled some BBQ chicken, using Patti’s BBQ sauce of course and it was delicious. But I made a few pieces too many. Not wanting to waste the chicken I pulled it and shredded it and put it in a bowl until I decided what to do with it.


The next day I decided to make quesadillas and use the chicken. I was so happy I did. Mercy! They were good.


I used the large flour tortillas. Scattered Mexican mix cheese and mozzarella cheese, sprinkled that with chopped jalapenos, chopped red onion, chopped green onion. I got my shredded chicken and sprinkled it with about a tablespoon of taco seasoning and heated it just a bit and put the chicken on half the tortilla. Drizzled more BBQ sauce over it and folded

the tortilla over and placed it on the flat grill. Turning it occasionally until it was good and done. Cut them up and topped them with sour cream and then sprinkled them with some chopped cilantro. Ya’ll, they were so good. You can use just any veggie you want with this recipe. The options are limitless. Especially now that all the fresh veggies are coming in. But we will talk about those next time.
