Happy Tuesday everyone. I hope you all had a wonderful weekend. The weather was very pleasant I must admit. But these back porch, coffee drinking, blog writing sessions are going to have to involve a fire pretty soon. It is a tad chilly.
But I was walking through Yesterday’s (Patti’s main gift shop) and I was looking through their new items and came across a coffee line they were carrying. And there was a Banana’s Foster flavored coffee. Well, I just had to try it and it was fabulous. And it also inspired my blog for this week. Banana’s Foster had been a favorite of mine years ago and I just had to have it again after drinking the coffee.
Now I changed it up just a bit to make it more of a brunch item, rather than a dessert. This is because I was trying to think of something good to have for brunch at my next girlfriend’s weekend that is coming up in a couple weeks. We have so much fun when we get together. We rent a cabin and just relax, cook and act like teenagers all weekend. My friend Debbie and I have been friends for more than 40 years and we live on opposite sides of the state. So these weekends are the best.
But back to today’s recipe. I decided to make waffles and add the Banana’s Foster as a topping. And ya’ll!!!!! It was fabulous. Ice cream and all.
This has an amazing flavor but as always, it’s pretty quick and easy to prepare.
First peel and slice your banana’s lengthwise, I used 4 small banana’s. In a large skillet, melt 4 TBSPs of unsalted butter, let it melt completely and then add ½ cup dark brown sugar. Let it combine with butter then add an ounce, or more of spiced rum. Place sliced banana’s in skillet. Basting the banana’s with the sauce. Prepare your waffles and top with the bananas and sauce. Add a scoop of Vanilla ice cream, and sprinkle with just a pinch of cinnamon. And dig in!! You will thank yourself!!
